Ingredients

  • 250g Butter, softened
  • 140g Caster Sugar
  • 1 Egg Yolk
  • 2 tsp Vanilla Extract
  • 250g Plain Flour
  • 50g Cocoa Powder
  • 85g White Chocolate Chunks (roughly break up a bar of chocolate!)
  • 85g Milk Chocolate Chunks (roughly break up a bar of chocolate!)

Preparation Method

  1. Mix the butter and sugar in a large bowl with a wooden spoon, then add the egg yolk and vanilla extract and briefly beat to combine.
  2. Sift over the flour and cocoa and stir until the mixture is well combined, add the chocolate chunks and mix well– you might need to get your hands in at the end to give everything a really good mix and press the dough together. Chill for 20-30 mins.
  3. Preheat the oven to 180oC/160oC fan/gas mark 4. Take the dough mixture out of the fridge and divide into 12 large balls. Put them on a baking tray lined with baking parchment and flatten them slightly
  4. Bake for 12-15 minutes, then carefully transfer the soft cookies to a cooling rack to harden up.
  5. Keep five for the show and enjoy the rest! (If you want to show more, feel free to do so)
